Tasting Notes

This stunningly intense black wine has a powerful nose of fresh fruits with

grilled and vanilla notes. It is fruity and silky on the palate with a light finish

on a coulis of dark fruit.

Serving Suggestions 

Serve at 16-17°C. Perfect with tapas, delicatessen meats and grilled

sausages. Ready to drink or be drunk within two years.

Summary

The Prince's Rosé is an exceptional vintage from the grape range of His Royal Highness Prince Henrik of Denmark.

This wine comes from the first terraces of the Lot. From the clarified juice, the wine is fermented at a low temperature.

Vinification 

After using the skin contact method, the juice thus obtained undergoes fermentation at low temperature.

Tasting Notes

This rosé has a strong bright pink colour. Its linden blossom notes are followed by lychee and grapefruit. This rosé is ample and expressive on the palate and attains a successful equilibrium between the fruit and acidity.

Serving Suggestions 

Serve at 10-12°C. Perfect with cold starters, delicatessen meats, salad, grilled fish and Mediterranean style dishes. Ready for drinking or to be drunk within two years.

LA CIGARELLE CHARDONNAY

IGP Côtes du Lot

Summary

Cahors wine-growing regions. A local wine from Cayx, La Cigaralle comes from the 4 hectares of Chardonnay planted, mostly on the limestone terraces around the château. "Cigaralle" is an old word probably from Catalan and used in Aquitaine and Occitanie to describe a pavilion built in a park or a pleasure garden where you can hear the song of cicadas. The grapes undergo mechanical harvesting, direct pressing, cold settling, thermo-regulated fermentation in stainless steel vats and aging on the lees.

Vinification 

The grapes are mechanically harvested, directly pressed, cold-settled,

fermented in temperature-controlled stainless steel vats and matured on

lees.

Tasting Notes

This wine has a complex and expressive nose with exotic fruit and white

fruits notes. It is ample, smooth and slightly buttery on the palate with a

delicious mineral base supported on the palate with a delicious mineral

base supported by real freshness.

Serving Suggestions 

Ideal as an aperitif, with seafood or shelllfish.

Summary

Appellation d’Origine Protégée (AOP) - This wine comes from a 7 hectares of vines with an average vine age of 35 years old.

Wine Area

Clay-limestone, on a hillside, south facing.

Vinification 

Following green harvesting, the leaves are manually removed from the grapes and the berries are selected on the sorting table. The grapes are mechanically harvested and firstly sorted by the machinery before being sorted manually for the second time on the table in the cellar. Château de Cayx undergoes cold (8°C) pre-fermentation-controlled stainless steel tanks. Alcoholic fermentation and maceration take 28 days at a temperature of 26/280 C, while final maceration occurs at a temperature of 32/35°C. Malolactic fermentation and ageing take place in new barrels for 1/3 for a minimum of 12 months.

Tasting Notes

A purple-coloured wine, Château de Cayx has the delicate aroma of red fruits and delivers all the intensity and fleshy character typical of Malbec. The wine has spicy notes and silky tannins on the palate. Château de Cayx’s

concentrated nature is characteristic of the finest Cahors wines ; it is also elegant and truly a wine for keeping, up to 10 years.

Serving Suggestions 

To serve chambered (19 ° C), with a duck breast with cherries or a leg of lamb of Quercy.

The Majesté du Château de Cayx cuvée lives up to its name, it is an extraordinary wine that we offer you with this 100% Malbec red wine protected by the AOP Cahors red which is a wine for aging par excellence that you can keep at least for 15 years.

Summary

Cuvée Majesté comes from a plot of 1.5 hectares of vines and benifit from a clay-limestone scree cone on a south-facing hillside. Average vine age is 35 years old, with a density of 5,000 vines/ha.

Vinification

After a harvest in green, the vine is manually stripped and the berries are selected on a sorting table. A cold pre-fermentation maceration is carried out for 3-4 days, then alcoholic fermentation begins and a long maceration of more than 30 days in a lightning of 50 hectoliters. During this period, manual pigeages are carried out in order to extract all the matter contained in the grape skins and to refine the tannins. This wine will finish aging and will age in new barrels for 24 months.

Tasting Notes

This cuvée reveals an intense and complex nose offering a refined marriage of black fruits, vanilla and chocolate, stimulated by menthol notes. The palate, at once full-bodied, velvety and suave, reveals a woody finish that is gradually fading in front of the fruit.

Recommendation

We advise you to decant the wine at least 1 hour before tasting to reveal the exceptional qualities of this wine. Wine of great care (15 years).

Château de Cayx Les Noces d’Or undergoes cold (8°C) pre-fermentation maceration for three days. The wine is made in temperature-controlled stainless steel tanks. Alcoholic fermentation and maceration take 28 days at a temperature of 26/28°C, while final maceration occurs at a temperature of 32/35°C. Malolatic fermentation and aging take place in new barrels for 1/3 for a minimum of 12 months.

A purple-coloured wine, Château de Cayx Les Noces d’Or has the delicate aroma of red fruits and delivers all the intensity and fleshy character typical of Malbec. The wine has spicy notes and silky tannins on the palate. Château de Cayx’s concentrated nature is characteristic of the finest Cahors wines; it is also elegant and truly a wine to keep & aged for (10 years).

Serving Suggestions

Recommanded at room temperature (19°C) and enjoyed with either a breast of duck with cherries or a roast loin of Quercy lamb.

This version comes with a presentation box with Her Majesty The Queen of Denmark's Monogram. This is ideal for a perfect gift, as a centre piece for dinner parties, anniversaries, or for a celebratory occasion.
